Sparkling Ontario Peach Shiver

The perfect frozen drink for hot summer days. This frosty beverage, made with fresh sweet Ontario Peaches, will add a tangy twist to your next brunch.

Makes 8 to 10 servings


3 cups dry sparkling wine 750 ml
1/2 cup water 125 ml
1/4 cup granulated sugar 50 ml
1 cup Ontario peaches 250 ml
1 2-inch (5cm) slice orange peel (zest) 1
  Ontario peaches, pitted and sliced  


  1. Chill sparkling wine and serving glasses.
  2. In saucepan, over medium-high heat, bring water and sugar to boil, stirring occasionally, until sugar has dissolved. Remove from heat. Add peaches and zest. Cover; let cool completely.

  3. In blender or food processor, blend peach mixture until smooth.
  4. Pour sparkling wine into 9-inch x 13-inch [3 l] pan. Stir in peach purée.

  5. Cover with plastic wrap and place in freezer for at least six hours. Stir every hour to break up ice into large crystals.

  6. To serve, spoon peach crystals into chilled glasses. Garnish with peach slices.
