Red Tart Cherry Mojitos

Adding simple syrup made with tart cherry juice and muddling a few extra Niagara cherries creates a mojito worthy of a celebration. Although this drink is so delicious you might just want to celebrate everyday!


Cherry Simple Syrup

1 cup cherry juice from Canadian Red Tart Cherries 250m
3/4 cup white sugar 175ml


1 tbsp cherry simple syrup15ml  
2 ounces white rum 60ml
1/2 cup broken/chopped ice 125ml
1/2 cup club soda or sparkling water 125ml
  approx. 6 Niagara Red Tart Cherries  
  juice of half a lime  
  2 mint sprigs or 6-8 leaves  



Cherry Simple Syrup:

In a saucepan, stir together cherry juice and sugar. Bring to a boil, then reduce to medium heat and simmer for approximately 3-5 minutes. Stir frequently, until sugar is completely dissolved. Set aside. This makes approximately 1.5 cups of simple syrup which may be kept covered in the frigde for 1 week.

Assembling the mojitos:

In a tall glass, please cherries, mint and lime juice. Muddle of mash gently to release flavours. Add cherry simple syrup and rum. If possible, let flavours develop for up to 30 minutes. Gently add the ice. To create a visual layer between the pink and clear liquid, slowly pour soda or sparkling water over the back of a tablespoon to complete the drink. Garnish with lime zest curls, another wedge of lime and a cocktail skewer with tart pitted cherries. Enjoy responsibly!
