This tangy, relative to the peach is soft and juicy. They are great for enjoying out of hand as the small pit is easily removed when the fruit is halved. Apricots are also ideal for baking as they hold their shape well and retain their flavour.

Coconut Shrimp with Ontario Apricot Dipping SauceShrimp is breaded in coconut flakes and pan-fried. Served with a homemade apricot dipping sauce, made from fresh Ontario apricots, soy sauce and ginger. Sprinkled with sliced green onions for garnish.
Ontario Apricot, Almond and Ginger Monkey BreadFlaky dough pieces are coated in ground almond and candied ginger, then mixed in with diced Ontario apricots and baked off in a Bundt cake pan. This dish is finished off with an apricot glaze and served to guests as a cake that they can pull apart.
