A flaky pastry cut into triangles is filled with coronation grapes that have been stewed with sugar and lemon juice. Baked until golden brown and topped with powdered sugar.

INGREDIENTS

 ¼ cup white sugar
 2 tbsp cornstarch
 ½ tsp lemon juice
 2 cups Ontario Coronation grapes
 2 squares, puff pastry, thawed
 1 egg yolk
 ¼ cup icing sugar

DIRECTIONS

Preheat oven to 450°F (232°C).

In a medium-sized saucepan over medium-high heat combine sugar, cornstarch, lemon juice and grapes. Simmer for 5 minutes. Set aside to cool.

Sprinkle work surface with flour. Roll out one square (200 g) thawed puff pastry into 9 x 9 inch square. Cut into 4 smaller squares. On a parchment lined baking tray, spoon 2 tbsp (25 mL) of grape mixture onto center of each small puff pastry square. Fold each in half diagonally to form a triangle; press the tips of the triangles together to seal and brush with egg wash. Repeat with the second square of puff pastry.

Bake for 20 minutes or until golden. Sprinkle with icing sugar to finish.
